- Mix cucumber, red onions, sazón,, and juice of 3 lemons in a large bowl. 
- Add red peppers, tajin tostadas sriracha (optional), scallions or green onions, and avocado cilantro; mix until everything is evenly blended. 
- Stir up sofrito, lime juice, and adobo seasoning in a different bowl. 
- Introduce the shrimp into the large bowl of vegetables; pour in the sofrito mixture and blend everything together. 
- Cover the bowl with plastic wrap and refrigerate for at least 3 hours. 
- Serve with other condiments as desired.
