Ingredients

  • 1 Cup red Robin beer (or any other favorite beer)
  • 1/2 Cup all-purpose flour
  • 4 cup buttermilk or whole milk
  • 1 Cup Unsalted butter
  • 3 tsp of ground dry mustard powder
  • 4 Cups Grated Parmesan Cheese

Instructions

  • In a medium saucepan, melt the butter over low heat.
  • Once melted, add the flour and whisk until combined. Cook for 3-4 minutes, stirring occasionally.
  • Add the beer and stir until combined. Then add the dry mustard and stir until combined.
  • Add the cheese and stir until melted. Then add the milk, stirring until combined.
  • Continue to cook over low heat for 8-10 minutes, stirring occasionally, or until the sauce has thickened to your desired consistency.
  • Serve immediately.

Notes

  • If the beer cheese is too thick, add additional milk to help thin it out.
  • You can also experiment with different beers for different flavors.
  • Try adding some spices like smoked paprika or cayenne pepper for an extra kick of flavor.
  • Serve hot, over vegetables, potatoes, pasta - whatever you choose!
