Preheat your oven to 350 degrees F.
In a bowl, whisk together the eggs, chicken broth, onion powder and seasoning. Set aside.
Grease a 9×13-inch baking dish with cooking spray. Place half of the cheese in the bottom of it.
Heat up vegetable oil in a skillet over medium heat, then add potatoes and cook for 5 minutes. Add garlic, onion, green chili peppers, and chicken or bacon, and sauté for an additional 5-7 minutes.
Pour the egg mixture into the skillet and cook for 4-6 minutes until done. Take it off the heat afterward.
Toast flour tortillas in a dry skillet over medium heat to make them pliable.
Place 2-3 tablespoons of the egg mixture in the center of each tortilla, then sprinkle a bit of cheese over it. Roll up and place seam side down in a baking dish. Do this with all remaining tortillas.
Sprinkle remaining cheese on top and bake for 15-20 minutes, until melted and bubbly.
Serve the burritos warm with toppings of your choice.
