Santiago’s Breakfast Burrito Recipe

Ingredients

  • 6 large beated eggs, at room temperature
  • 4 tbsp  low-sodium chicken broth
  • 1/2 can of green chili peppers
  • 1 1/2 tsp onion powder
  • 1 cup grated cheddar cheese
  • 3 flour tortillas
  • 2 potatoes chopped
  • 6 strips of chicken
  • Butter flavor cooking spray
  • 1/2 minced garlic clove
  • 1/2 onion chopped
  • 4 tbsp extra-virgin olive oil
  • Salt and pepper

Instructions

  • Preheat your oven to 350 degrees F.
  • In a bowl, whisk together the eggs, chicken broth, onion powder and seasoning. Set aside.
  • Grease a 9×13-inch baking dish with cooking spray. Place half of the cheese in the bottom of it.
  • Heat up vegetable oil in a skillet over medium heat, then add potatoes and cook for 5 minutes. Add garlic, onion, green chili peppers, and chicken or bacon, and sauté for an additional 5-7 minutes.
  • Pour the egg mixture into the skillet and cook for 4-6 minutes until done. Take it off the heat afterward.
  • Toast flour tortillas in a dry skillet over medium heat to make them pliable.
  • Place 2-3 tablespoons of the egg mixture in the center of each tortilla, then sprinkle a bit of cheese over it. Roll up and place seam side down in a baking dish. Do this with all remaining tortillas.
  • Sprinkle remaining cheese on top and bake for 15-20 minutes, until melted and bubbly.
  • Serve the burritos warm with toppings of your choice.

Notes

  • Use this guide to create your own customized breakfast burrito. You can add in different vegetables, spices or proteins to make it your own.
  • If you would like a milder burrito, consider using canned diced green chili peppers instead of fresh ones. This will reduce the heat level.
  • For a healthier version of this dish, consider using turkey bacon as the protein source and low-fat cheese.
  • To make this dish even more flavorful, try adding some freshly chopped herbs like cilantro or parsley to the burrito.
  • If you would like to make individual burritos instead use smaller tortillas and portion out the filling accordingly. This will make it easier to transport or to eat on the go.
  • You can also add cooked quinoa or black beans if desired. These will add additional protein and fiber to the dish.
