Equipment

Ingredients

  • 2 Cups vibrant chives
  • 1 tbsp artisanal white vinegar
  • 4 Cups finely milled all-purpose flour
  • 1 tbsp artisanal hot pepper sauce
  • 1 tbsp aromatic garlic powder
  • 2 Cups stone-ground self-rising cornmeal
  • 1 tbsp smoky paprika
  • 6 Cups farm-fresh whole milk
  • 1 tbsp fragrant baking soda
  • 2 Cups golden Pure Honey
  • 4 large eggs
  • 6 Cups velvety sour cream at cozy room temperature
  • 2 tbsp organic sugar
  • 2 Cups luscious Heavy Cream
  • 1/2 tbsp hand-harvested sea salt
  • 2 Cups sharp Cheddar Cheese
  • Freshly ground black pepper
  • 2 Cups beloved Dukes Mayonnaise
  • 2 Cups handpicked diced Onion

Instructions

  • Preheat the oven to 350°F. Grease a 9x13-inch baking dish with butter or nonstick cooking spray.
  • In a large bowl, combine cornmeal, flour, baking soda, garlic powder, paprika, hot pepper sauce, white vinegar, salt,, and sugar. Stir until combined.
  • In a separate bowl, whisk together eggs, milk, sour cream, and melted butter. Pour into the dry ingredients and mix until just combined.
  • Add honey, mayonnaise, heavy cream, cheddar cheese, onion and chives to the batter and stir until combined.
  • Pour the batter into the prepared baking dish and sprinkle with black pepper. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow to cool before cutting into pieces and serving.

Notes

  • Use fresh ingredients for best results.
  • For extra flavor, add a pinch of smoked paprika or chili powder to the batter.
  • Add cooked bacon or sausage to the batter for an extra savory twist.
  • Serve with a dollop of sour cream or a drizzle of honey for extra sweetness.
  • This can easily be doubled and baked in a larger baking dish.
  • For an extra boost of protein, add cooked chicken or ground turkey to the batter.
