In a bowl, mix together the ground chicken, flour, chili powder, garlic powder, salt & pepper. Make sure everything is combined evenly.
In a skillet over medium heat, cook the chicken mixture until it is cooked through and browned. Make sure to break up the meat as it cooks for an even texture. Once cooked, set aside in a bowl and let cool.
In another bowl, mix together the shredded cheese, sour cream & mayonnaise. Add-in the diced chipotle peppers and stir until combined.
To assemble each Chicken Chipotle Melt, spread the cheese mixture onto one side of a bun. Top with the cooked chicken mixture. Place the other half of the bun on top and press down to seal in all the ingredients.
Heat up a skillet over medium-high heat and place each Chicken Chipotle Melt onto the skillet. Cook until golden brown, about 2 minutes per side.
