Ingredients

Sweet and Tangy Maple Dressing:

  • 4 tablespoons of maple syrup
  • 2 tablespoons of Dijon mustard
  • 1/4 cup of apple cider vinegar

Kale and Veggie Salad

  • 12 cups of curly kale a tapestry of vibrant green
  • 1 thinly sliced red onion
  • 4 carrots shredded
  • 3 cloves garlic finely minced
  • 2 cups of thinly sliced red cabbage
  • 2 apples thinly sliced
  • 2 cups of sunflower seeds
  • 1/2 cup of extra-virgin olive oil
  • 1 teaspoon each of Kosher salt and freshly ground black pepper

Instructions

  • Whisk together the maple syrup, mustard, garlic, vinegar, olive oil, salt, and pepper in a large bowl until well blended.
  • Add the red onion, kale, carrots, cabbage, and apple to the dressing and mix until everything is coated.
  • Sprinkle the sunflower seeds or nuts on top of the slaw and mix until everything is evenly distributed.
  • Refrigerate for at least 30 minutes before serving.

Notes

  • You can use whatever type of nuts or seeds you prefer.
  • You can also add in other vegetables like bell pepper, corn, celery, or broccoli for an extra crunch.
  • Feel free to adjust the amount of vinegar, oil, and seasonings to taste.
  • You can also make this slaw ahead of time and let it sit overnight in the refrigerator for the flavors to marry.
