Equipment

  • bowl
  • Paper towel-lined plate

Ingredients

Creamy Pepper Sauce

  • 1 cup creamy mayonnaise
  • 1⅓ tablespoon distilled white vinegar
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon Dijon mustard
  • 1 tablespoon mustard powder dry
  • 2 tablespoons chopped chipotle peppers in adobo sauce
  • tablespoon coarsely cracked black pepper
  • ½ teaspoon finely ground white pepper
  • 1 teaspoon sea salt
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic granules
  • 1 tablespoon onion granules
  • 1 teaspoon dried parsley flakes
  • 1 teaspoon smoked chili flakes
  • ¼ teaspoon umami seasoning MSG (optional)

Breakfast Burger

  • 1 pound ground beef chuck 80/20 lean-to-fat ratio
  • 8 slices crispy smoked bacon
  • 4 golden hash brown patties frozen
  • 4 small brioche-style burger buns
  • 4 teaspoons salted butter
  • 4 large eggs
  • 4 slices sharp American cheese
  • 2 tablespoons ketchup mixed with a dash of hot sauce
  • ½ cup caramelized onions

Instructions

Step 1: Prepare the Creamy Pepper Sauce

  • Start by making the creamy pepper sauce. In a bowl, whisk together mayonnaise, white vinegar, lemon juice, Dijon mustard, and mustard powder. Stir in the chipotle peppers for a little kick. Add in the cracked black pepper, white pepper, salt, smoked paprika, garlic granules, onion granules, parsley flakes, and smoked chili flakes. Mix well. Set aside to let the flavors meld.

Step 2: Cook the Hash Browns

  • Heat a skillet over medium heat and add a small amount of oil or butter. Once hot, place the frozen hash brown patties in the skillet. Cook until crispy and golden brown on both sides. This should take about 3-4 minutes per side. Remove from the skillet and keep warm.

Step 3: Cook the Bacon

  • In the same skillet, add the bacon slices. Cook until crispy, making sure to flip them occasionally for even cooking. This adds a savory layer to the burger that is simply irresistible. Once cooked, transfer to a paper towel-lined plate to drain any excess grease.

Step 4: Cook the Beef Patties

  • Increase the heat slightly and add the ground beef chuck to the skillet. Form it into burger-sized patties, seasoning with salt and pepper. Cook for about 4-5 minutes per side, depending on your desired doneness. About a minute before you finish cooking, place a slice of American cheese on each patty, allowing it to melt.

Step 5: Cook the Eggs

  • In a separate non-stick skillet, melt a teaspoon of butter over low heat. Crack the eggs into the skillet. Cover with a lid for about 2-3 minutes if you want the whites fully set but the yolks still runny. This will create that luscious richness you’ll enjoy on the burger.

Step 6: Assemble the Burger

  • Spread a generous amount of creamy pepper sauce on the bottom bun. Layer it with the beef patty, followed by crispy bacon, a hash brown patty, and the runny egg. Top it all off with caramelized onions and the top bun. Serve with a side of your favorite breakfast potatoes.

Notes

  • Cook the Bacon First: This lets the grease flavor the skillet for the other components.
  • Keep the Eggs Warm: If you’re making multiple burgers, keep the cooked eggs warm in an oven set to low.
  • Add Fresh Herbs: A sprinkle of fresh chives or parsley can brighten up the flavor.
  • Experiment with Cheese: If you’re feeling fancy, try a slice of pepper jack for added heat.
  • Customize the Sauce: Feel free to adjust the spicy ingredients in the sauce according to your taste.
