Ingredients

  • 1 pound spicy Italian sausage casings removed
  • 1 medium onion diced
  • ½ red bell pepper diced
  • ½ green bell pepper diced
  • 3 cloves garlic minced
  • ¼ teaspoon sea salt or to taste
  • ¼ teaspoon freshly ground black pepper or to taste
  • 1 tablespoon Italian herb blend optional, to taste
  • 6 large eggs
  • 16 small flour tortillas whole wheat or white
  • 4 tablespoons melted butter
  • 1 cup shredded cheddar cheese

Serve with:

  • Salsa
  • Sour cream
  • ½ teaspoon smoked paprika for added depth
  • 1/4 cup chopped fresh cilantro for garnish

Instructions

  • Ready to dive into cooking? Let’s break it down step by step.

Step 1: Cook the Sausage

  • In a skillet over medium heat, add the sausage. Use a wooden spoon to break it apart into small crumbles. Cook the sausage until browned and fully cooked, approximately 8 to 10 minutes. Don’t rush! Those crispy bits make all the difference.

Step 2: Sauté Vegetables

  • Once the sausage is cooked, add the diced onion, bell peppers, and minced garlic to the pan. Season with salt, pepper, and the Italian herb blend if you’re using it. Cook until the vegetables are tender, roughly 5 minutes. Your kitchen will smell amazing!

Step 3: Scramble the Eggs

  • In a separate bowl, whisk together the eggs. Add the egg mixture to the pan with the sausage and vegetables. Cook, gently stirring, until the eggs are scrambled and just set. This won’t take long, perhaps 3 to 4 minutes. You want them fluffy, not rubbery.

Step 4: Prepare the Tortillas

  • Heat the tortillas in a separate pan or in the microwave to make them pliable. Brush both sides with melted butter for an added touch of richness.

Step 5: Assemble the Taquitos

  • Take a tortilla and place a generous amount of your sausage, veggie, and egg mixture at one end. Sprinkle some shredded cheddar cheese on top, and roll it tightly. Repeat this with remaining ingredients.

Step 6: Cook the Taquitos

  • In a clean skillet, add a little butter and place the taquitos seam side down. Cook them on medium heat until golden brown and crispy, about 2-3 minutes per side. This adds a delightful crunch that complements the soft inside.

Notes

Here are some tricks I’ve learned that can take your taquito game to the next level
  • Use fresh ingredients: The fresher the ingredients, the better the flavor. I recently switched to farm-fresh eggs, and wow, what a difference!
  • Experiment with spices: Feel adventurous? Toss in some cumin or chili powder for an extra kick.
  • Make-ahead option: Prepare the filling ahead of time and store it in the fridge. When you’re ready to eat, simply assemble and cook.
  • Serve with dips: Salsa and sour cream are great, but consider guacamole or hot sauce for variety.
  • Freeze for later: Prepare a big batch and freeze them. To reheat, place them in the oven at 350°F (175°C) until warmed through.
