Instructions

Step 1: Gather Your Ingredients

  • First, you want to ensure everything is within reach. A smooth cooking process is a happy cooking experience. So put on some music, grab your apron, and let’s get started!

Step 2: Prepare the Shallots and Garlic

  • Finely chop the shallot. This adds a mild onion flavor without being overwhelming. Then, mince or grate your garlic. I prefer using a microplane for garlic because it creates a paste that blends easily.

Step 3: Combine the Ingredients

  • In a bowl, combine the minced shallots and garlic. Add the vinegar, honey, salt, Dijon mustard, lemon zest, and ground black pepper. Stir this mixture well. The flavors will start to meld, and the tanginess from the vinegar will integrate with the sweetness of the honey.

Step 4: Add the Olive Oil

  • It’s time to slowly whisk in the extra virgin olive oil. Doing this gradually helps to emulsify the dressing, resulting in a smooth, cohesive mix. If you don’t have a whisk on hand, a fork will do the trick.
