  • 1 pound of sliced baby bella mushrooms or white button mushrooms
  • 2 tablespoons of unsalted butter
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of Worcestershire sauce
  • ¼ cup of rich beef broth
  • 1 teaspoon of minced garlic
  • 1 teaspoon of freshly ground black pepper
  • 1 tablespoon of balsamic vinegar for added depth
  • ½ teaspoon of dried thyme for an herbal note

Burgers

  • 1 pound of ground beef 80/20 blend
  • 1 teaspoon of Worcestershire sauce
  • 1 tablespoon of your favorite steak seasoning
  • 4 slices of nutty Swiss cheese
  • 4 brioche hamburger buns

Instructions

Step 1: Prepare the Mushrooms

  • Start by heating the butter and olive oil in a large skillet over medium heat. Once the butter melts, add the sliced mushrooms. Sauté them for about 5 minutes until they’re golden brown. Stir frequently to ensure even cooking. Add the minced garlic and cook for another minute.
  • Next, pour in the Worcestershire sauce and beef broth, followed by the black pepper, balsamic vinegar, and thyme. Mix well and simmer for about 10 minutes, allowing the flavors to meld. The mushrooms should be juicy and flavorful but not swimming in liquid.

Step 2: Shape the Patties

  • In a mixing bowl, combine the ground beef, Worcestershire sauce, and steak seasoning. Do not overmix! Gently shape the mixture into four equal-sized patties. Make a small indentation in the center of each patty; this helps prevent them from puffing up while cooking.

Step 3: Grill the Patties

  • Preheat your grill or skillet over medium-high heat. Once hot, add the patties. Cook for about 4-5 minutes on each side for medium-rare, or adjust the time based on your preferred doneness. During the last minute of cooking, place a slice of Swiss cheese on top of each patty and close the lid to melt the cheese.

Step 4: Toast the Buns

  • While the patties finish cooking, you can toast your brioche buns. Lightly butter the insides and place them face down on the grill for a minute or two until golden. This adds a delightful crunch to the burger’s structure.

Step 5: Assemble the Burger

  • Now comes the fun part! Place the burger patty with melted Swiss cheese on the bottom bun. Generously top it with the sautéed mushrooms. Finish with the top bun and press down slightly. If desired, you might want to add condiments like mayonnaise or mustard for an extra layer of flavor.

Notes

  • Let the Beef Sit at Room Temperature: Before cooking, allow your ground beef to sit at room temperature for 20-30 minutes. It helps the meat cook more evenly.
  • Don’t Press Down on the Patties: Resist the urge to press down on the patties while they cook. This squeezes out juices, leaving you with a dry burger.
  • Experiment with Seasoning: Feel free to play with different seasonings. Try garlic powder, onion powder, or even smoked paprika for a unique twist.
  • Use a Meat Thermometer: For precise cooking, check the internal temperature. Aim for 160°F for medium doneness.
  • Sauté Extra Mushrooms: If you’re a mushroom lover, don’t hesitate to double the amount. More mushrooms never hurt anyone!
