Equipment

Ingredients

  • 2 tbsp liquid smoke
  • 2 cups soy sauce
  • 5 lb flank steak pounded thin
  • 2 tbsp black pepper (reshly ground )
  • 1 tbsp onion powder
  • 2 cups Worcestershire sauce
  • 1/2 tbsp crushed red pepper
  • 3 tbsp brown sugar
  • 1 tsp cayenne pepper
  • 1 tbsp garlic powder

Instructions

Prepare the meat

  • Cut the flank steak into 3-inch wide strips. Place the strips on a cutting board and use a meat mallet to pound them thin.

Marinate

  • In a large bowl or container, mix together soy sauce, Worcestershire sauce, black pepper, liquid smoke, garlic powder, onion powder, brown sugar, crushed red pepper, and cayenne pepper. Add the beef strips to the marinade and mix together until all of the strips are well coated. Cover the bowl or container with a lid or plastic wrap and place it in the refrigerator for at least 8 hours or overnight.

Dry the meat

  • Preheat your oven to 175°F. Line a baking sheet with aluminum foil and place a wire cooling rack over top. Arrange the marinated beef strips on the wire rack in an even layer, making sure that they are not too close together.

Baking

  • Place the baking sheet in the preheated oven and bake for 4-5 hours or until the beef jerky is completely dry. Once done, remove from the oven and let cool before eating.

Notes

  • Make sure to cut your strips of meat evenly so that they will cook evenly.
  • For spicier jerky, add more cayenne pepper or crushed red pepper.
  • If you don’t have a wire cooling rack, you can also use parchment paper or aluminum foil to line the baking sheet.
  • If you want your beef jerky to be chewier, cook it for less time.
  • For a sweeter flavor, add more brown sugar.
  • For safety reasons, make sure that the beef jerky is completely cooled before storing it in an airtight container at room temperature for up to two weeks.
  • To make sure that your beef jerky is cooked through, use a food thermometer to check the internal temperature of the meat before eating it. The internal temperature should reach at least 160°F.
