Begin by adding the buttermilk, salt, and pepper to a shallow bowl or baking dish. Mix until combined and set aside.
Next, lightly coat a large skillet with cooking spray and place over medium heat.
Meanwhile, in a separate shallow bowl, combine the bread crumbs, flour, eggs, and Italian seasoning and mix until combined.
Dip each chicken tenderloin into the buttermilk mixture and then into the egg/breadcrumb mixture. Make sure they are well coated with the coating ingredients.
Once the skillet is hot, add the chicken tenders and cook for about 3 minutes per side until golden brown and cooked through.
Transfer the cooked chicken fingers to a plate lined with paper towels to absorb any excess oil.
To finish off the dish, sprinkle crushed cornflakes over the top of the chicken fingers for extra crunch.
Serve the chicken fingers with your favorite dipping sauce!
