Ingredients

  • Elbow macaroni (8 ounces)
  • Cream-style cottage cheese (2 cups)

  • Sharp cheddar cheese (2cups), shredded

  • 1 carton sour cream ( 8 ounces)
  • 1 egg, lightly beaten
  • 1 tablespoon coconut oil

  • Salt to taste

Instructions

  • Preheat the oven to 375 degrees Fahrenheit.
  • Cook elbow macaroni as per package instructions in a large saucepan and drain when done.
  • In a large cooking bowl, mix together cream-style cottage cheese, sharp cheddar cheese, sour cream, egg and coconut oil until well combined.
  • Add the cooked macaroni to the cheese mixture and mix until all ingredients are well incorporated.
  • Grease a baking dish with cooking spray or butter, then pour in the macaroni and cheese mixture.
  • Bake in preheated oven for 30 minutes or until golden brown on top.
  • Let cool before serving.

Notes

  • You can substitute elbow macaroni with another type of pasta such as penne or rotini.
  • Make sure to add salt to taste before baking to enhance the flavor of the dish.
