Preheat the oven to 375 degrees Fahrenheit.
Cook elbow macaroni as per package instructions in a large saucepan and drain when done.
In a large cooking bowl, mix together cream-style cottage cheese, sharp cheddar cheese, sour cream, egg and coconut oil until well combined.
Add the cooked macaroni to the cheese mixture and mix until all ingredients are well incorporated.
Grease a baking dish with cooking spray or butter, then pour in the macaroni and cheese mixture.
Bake in preheated oven for 30 minutes or until golden brown on top.
Let cool before serving.
