Ingredients

  • 1 large Onion (finely chopped)
  • 1 can cream of Celery Soup
  • 8 Oz Cream Cheese
  • 1 can cream of mushroom soup
  • 1 tsp garlic powder
  • A bit of Bacon
  • Salt & pepper to taste
  • 10/12 pcs medium-sized Potatoes
  • 11/2 cup Milk
  • 1/2 stick Butter
  • Shredded cheddar cheese
  • Some Chives

Instructions

  • Cut the potatoes into cube sizes and place them in a large pot. Add enough water to cover the potatoes and 1 tablespoon salt, and one onion. Bring the potatoes to a boil over medium-high heat, then reduce the heat to medium and cook for about 15 minutes or until they are fork-tender.
  • Use a strainer to remove excess water from the potatoes and onions. Then, add milk and cream cheese.
  • Remove the pot from the heat. Stir until the cream cheese has melted. Add in the butter, soups, garlic powder, salt and pepper. Mix well and simmer for an additional 5 minutes.
  • Your delicious potato soup is now ready to enjoy! Grab a bowl and pour in your piping hot soup. Top it off with shredded cheese, bits of bacon and chives. Now sit back, relax, and enjoy!

Notes

  • Be sure to season the soup well with salt and pepper before serving.
  • Use Yukon gold potatoes for the best flavor and texture.
  • If you want a creamier soup, use whole milk.
  • For extra flavor, add 1/4 teaspoon of cayenne pepper.
  • If you want a vegetarian version of this soup, simply omit the bacon.
  • Try to use fresh ingredients.
