How to make Rafferty’s potato soup?

Making this famous potato soup is actually quite simple. Start washing and dicing some potatoes. No need to peel them, as Rafferty doesn’t do this. They leave the skins on for flavor and texture.

Then get them cooked in a pot with water. While the potatoes are boiling, start chopping up your other ingredients. Once everything is chopped, add it to the pot and cook until the vegetables are tender.

I have worked on this recipe for years, and I’m proud to say that it is the closest thing to the real thing you will find outside Rafferty’s restaurant. If you have never been there, Rafferty’s is a casual family dining chain found in the Midwest, with most of its locations in Kentucky, Georgia and Indiana.

The potatoes are the star of the show in this soup, and they need to be good quality potatoes that will hold up to cooking and not turn to mush. I like to use Yukon Gold potatoes for this soup. They are yellow potatoes with thin skin that doesn’t need to be peeled.

This classic soup is creamy, flavorful and filling, but it’s easy to make. You can have a big pot on the stove in no time, perfect for feeding a crowd or enjoying leftovers throughout the week. So if you’re looking for an awesome soup recipe, give this one a try!

Is it better to peel your potatoes or leave the skin on?

Whether or not to remove the skin is usually up to the individual, but we find that it’s better to leave them on in soup. This particular recipe also uses Yukon Gold potatoes, which have delicate skins. Keeping the skins intact allows the potatoes to hold their shape and avoid falling apart as easily.

Ingredients

  • 1 large Onion (finely chopped)
  • 1 can cream of Celery Soup
  • 8oz Cream Cheese
  • 1 can cream of mushroom soup
  • 1 tsp garlic powder
  • A bit of Bacon
  • Salt & pepper to taste
  • 10-12 medium-sized Potatoes
  • 1½ cup Milk
  • ½ stick Butter
  • Shredded cheddar cheese
  • Some Chives

Instructions

Step 1

Cut the potatoes into cube sizes and place them in a large pot. Add enough water to cover the potatoes and 1 tablespoon salt, and one onion. Bring the potatoes to a boil over medium-high heat, then reduce the heat to medium and cook for about 15 minutes or until they are fork-tender.

Step 2

Use a strainer to remove excess water from the potatoes and onions. Then, add milk and cream cheese.

Step 3

Remove the pot from the heat. Stir until the cream cheese has melted. Add in the butter, soups, garlic powder, salt and pepper. Mix well and simmer for an additional 5 minutes.

Step 4

Your delicious potato soup is now ready to enjoy! Grab a bowl and pour in your piping hot soup. Top it off with shredded cheese, bits of bacon and chives. Now sit back, relax, and enjoy!

Tips

  • Be sure to season the soup well with salt and pepper before serving.
  • Use Yukon gold potatoes for the best flavor and texture.
  • If you want a creamier soup, use whole milk.
  • For extra flavor, add 1/4 teaspoon of cayenne pepper.
  • If you want a vegetarian version of this soup, simply omit the bacon.
  • Try to use fresh ingredients.

What does it taste like?

This soup is creamy and full of flavor. The potatoes are soft and the cheese gives the soup a nice depth of flavor. The bacon bits add a nice salty crunch to the soup. Overall, this soup is delicious and sure to please!

What is the best way to keep potatoes from becoming mushy in soup?

The key to keeping potatoes from getting mushy in soup is to cook them properly. We recommend simmering the potatoes in the soup until they are just tender, then removing them from the heat, so they don’t overcook. During boiling, you may also try adding a bit of salt. It helps to retain their shape.

How to store leftover Rafferty’s potato soup?

You can store leftover soup in the fridge for up to 3 days. You must store it in an airtight container. Reheat in a pot on the stove over medium heat until warmed through.

This soup freezes well, so make a big batch and save some for later! Simply place it in a freezer-safe container and thaw it when you’re ready to eat.

What to serve with Rafferty’s potato soup?

You can serve this soup as a main dish or as a side. If you are serving it as a main dish, I recommend pairing it with a simple salad and some crusty bread. If you are serving it as a side, it goes great with roasted chicken or pork chops. No matter how you serve it, this soup is sure to impress.
