I have worked on this recipe for years, and I’m proud to say that it is the closest thing to the real thing you will find outside Rafferty’s restaurant. If you have never been there, Rafferty’s is a casual family dining chain found in the Midwest, with most of its locations in Kentucky, Georgia and Indiana.

The potatoes are the star of the show in this soup, and they need to be good quality potatoes that will hold up to cooking and not turn to mush. I like to use Yukon Gold potatoes for this soup. They are yellow potatoes with thin skin that doesn’t need to be peeled.

Is it better to peel your potatoes or leave the skin on?

Whether or not to remove the skin is usually up to the individual, but we find that it’s better to leave them on in soup. This particular recipe also uses Yukon Gold potatoes, which have delicate skins. Keeping the skins intact allows the potatoes to hold their shape and avoid falling apart as easily.

Ingredients

  • 1 large Onion (finely chopped)
  • 1 can cream of Celery Soup
  • 8oz Cream Cheese
  • 1 can cream of mushroom soup
  • 1 tsp garlic powder
  • A bit of Bacon
  • Salt & pepper to taste
  • 10-12 medium-sized Potatoes
  • 1½ cup Milk
  • ½ stick Butter
  • Shredded cheddar cheese
  • Some Chives

Instructions

Step 1

Cut the potatoes into cube sizes and place them in a large pot. Add enough water to cover the potatoes and 1 tablespoon salt, and one onion. Bring the potatoes to a boil over medium-high heat, then reduce the heat to medium and cook for about 15 minutes or until they are fork-tender.

Step 2

Use a strainer to remove excess water from the potatoes and onions. Then, add milk and cream cheese.

Step 3

Remove the pot from the heat. Stir until the cream cheese has melted. Add in the butter, soups, garlic powder, salt and pepper. Mix well and simmer for an additional 5 minutes.

Step 4
