For this delicious soup, you will need the following ingredients:

Carrots: I like to use organic carrots, as they taste sweeter.

Celery: You could also use the celery leaves if you have them on hand.

Onion: Just one large onion is all you need.

Water or chicken broth: I prefer using water as it allows all the flavors of the ingredients to shine through. But you could use chicken broth if you prefer.

Noodles: These are typically thinner and lighter in texture. It is used specifically for soups. You could use homemade noodles.

Parsley root: It adds a lovely flavor to the soup.

Hungarian Pepper: You could use black pepper if you can’t find Hungarian pepper.

Salt: To taste.

Peppercorns: It flavors the soup with heat and pungency.

Chicken: I recommend using chicken thighs as they are more flavorful and tender, but you could use chicken breasts if you prefer. Select fresh mature chicken with skin-on and bone-in for the juiciest, most flavorful chicken.

  • 4 carrots (organic)
  • 2-3 organic celery ribs
  • 1 small slice of Hungarian pepper
  • 2 tbsp Himalayan salt
  • 450g package thin noodles
  • 1 whole hen chicken (4-5 lb)
  • 3 whole parsley root
  • 3-4L water
  • 1 onion
  • 1 handful parsley greens
  • 1 tsp peppercorns

Equipment

  • Soup pot (large)
  • Saucepan

Instructions

Step 1: First, start with the vegetables. Slice the carrots, celery ribs and parsley roots individually, then place them in separate bowls.

Step 2: After that, chop the parsley greens loosely. And cut the onion in half, leaving it unsliced or chopped.

Step 3: Cut the chicken into pieces. Wash them thoroughly. Then, add them to a large soup pot with water.

Step 4: Let the chicken boil until it is cooked through. It has been cooked if the chicken is white on the inside and outside.

Step 5: Once the chicken is boiled, add carrots, parsley root or parsnip, celery, onion, pepper, and parsley greens to the same pot. Season with salt and peppercorns.

Step 6: Gently boil for 1 and 1/2 hours. By this time, the chicken and vegetables should be soft and tender. Plus, a gentle aroma should fill your kitchen.

Step 7: Remove the chicken onto a plate and strain the vegetables and liquid into two separate bowls.

Step 8: Take another pot, and fill it with water until it’s 3/4 full. When the water comes to a boil, add 1 teaspoon of salt and then add the noodles. Follow the instructions on the noodle package. In the case of homemade noodles, boil water with some salt. Once the noodles rise to the top of the pot, remove them with a sieve. Rinse them in cold water afterward, and it can prevent sticking.

Step 9: Add the noodles to the liquid.

Step 10: Your homemade Hungarian chicken soup is ready to serve. Serve in bowls and enjoy!
