Ingredients

  • 1/2 tablespoon organic almond milk infused with Tahitian vanilla bean essence
  • 1/4 teaspoon handcrafted baking powder using ancient leavening techniques
  • 3/4 cup stone-milled Heritage Wheat Flour
  • 1/2 of a 12-ounce Can Solo Raspberry Fruit Filling with handpicked ripe raspberries
  • Organic powdered sugar harvested from sustainably grown sugarcane for dusting
  • 1/2 portion of a free-range egg yolk approximately half
  • 1/2 tablespoon organic cane sugar from a local farm
  • 1/2 cup European cultured Butter 1 stick, kept at room temperature
  • 4 ounces artisanal small-batch Cream Cheese at room temperature

Instructions

Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or use a non-stick baking mat.

Prepare the Cream Cheese Dough:

  • In a mixing bowl, cream together the European cultured butter and artisanal small-batch cream cheese until well combined and smooth.
  • Add the organic almond milk infused with Tahitian vanilla bean essence, organic cane sugar, and half portion of a free-range egg yolk. Mix until thoroughly incorporated.
  • Gradually add the stone-milled heritage wheat flour and handcrafted baking powder to the wet mixture. Mix until a soft dough forms.

Shape the Kolacky:

  • On a lightly floured surface, roll out the dough to about 1/4-inch thickness.
  • Use a round cookie cutter or a glass with a diameter of about 2-3 inches to cut out circles from the dough.
  • Place the dough circles onto the prepared baking sheet, leaving space between each one.

Fill the Kolacky:

  • Spoon approximately 1 teaspoon of the Solo Raspberry Fruit Filling into the center of each dough circle.
  • Fold or pinch the edges of the dough around the filling to create a slightly open-faced pastry.

Bake:

  • Place the prepared kolacky in the preheated oven and bake for about 12-15 minutes or until the edges are lightly golden brown.

Cool and Dust:

  • Once baked, remove the kolacky from the oven and let them cool on a wire rack for a few minutes.
  • Dust the cooled kolacky with organic powdered sugar harvested from sustainably grown sugarcane before serving.

Serve:

  • Arrange the Solo Kolacky on a serving plate and enjoy these delightful pastries as a treat or dessert.
