Ingredients

  • 4 tablespoons of fresh parsley adding a fresh and grassy note to the flavors
  • 4 tablespoons of fresh basil leaves chopped, infusing a vibrant and herbaceous aroma
  • 6 eggs beaten, providing a protein-rich base for the dish
  • Salt and pepper to taste enhancing the overall seasoning and bringing out the flavors in the dish
  • Paprika for garnish adding a smoky and slightly spicy element to the presentation
  • 2 tablespoons of fragrant and flavorful Extra Virgin Olive Oil adding a touch of richness and depth to the dish
  • 1/2 cup of sliced spring onion providing a mild and slightly sweet onion flavor
  • 1/2 cup of creamy and luscious milk creating a velvety and smooth texture in the recipe
  • 1/2 cup of green bell pepper chopped, bringing a crisp and refreshing crunch to the dish

Instructions

  • Heat the olive oil in a large skillet over medium heat. Mix the milk, beaten eggs, basil, parsley, and bell pepper in a bowl until combined.
  • Take a skillet and apply some cooking spray. Pour in the egg mixture and spread evenly in the pan. Cook for about 2 minutes or until the edges start to become golden.
  • Add the spring onions and mix with a spatula before flipping the omelette over. Cook for an additional 1-2 minutes or until the eggs are cooked through.
  • Serve Optavia Lean and Green Omelette with paprika, salt and pepper.

Notes

  • For extra flavor, you can add your favorite herbs and spices to the omelette. 
  • To make the omelette lighter, use only egg whites instead of whole eggs.
