Ingredients

Instructions

  • Dissolve the yeast in ¼ cup of warm water and set aside. Then in a medium bowl, combine the all-purpose flour, vital wheat gluten, salt, granulated sugar, cinnamon, and butter. Mix until combined.
  • Now, add the eggs, molasses, honey, and pumpkin to the dry ingredients and mix until everything is combined.
  • Gradually add the warm milk while stirring constantly. Add the yeast and mix until the dough forms a soft ball.
  • Turn out the dough onto a lightly floured surface and knead for 8-10 minutes or until it becomes elastic. Place the dough into a greased bowl, cover it with plastic wrap, and let it rise in a warm place for an hour or until doubled in size.
  • Turn the dough onto a lightly floured surface and roll it into a rectangle of about 20” x 10. Sprinkle the pecan meal, fruits, and nuts over the dough and roll it up.
  • Place the dough onto a greased baking sheet, cover it with plastic wrap, and let it rise for another hour or until doubled in size.
  • Preheat oven to 375°F and bake the bread for 40-45 minutes or until golden brown. Remove from the oven and brush the top with melted butter. Allow to cool completely before slicing.

Notes

• Let the dough rise in a warm place for best results.
• Don’t roll it too thin, or you won’t get enough filling inside.
• Knead the dough for 8-10 minutes or until it becomes elastic.
• Use a combination of fruits and nuts to create the desired flavor profile.
• Brush the top with melted butter after baking for a crunchy crust.
• Allow the bread to cool completely before slicing.
