  • 2-3 tablespoons Melted butter
  • ¾ cup Milk
  • 8 tablespoons Vital wheat gluten
  • ¼ cup Warm water
  • 5 tablespoons Unsalted butter
  • 1 1/2 tablespoons The ground cinnamon
  • 1 tablespoon Honey
  • ⅓ cup Canned pumpkin
  • ⅓ cup Prune plum filling
  • ⅓ cup Granulated sugar
  • 1 tablespoon Salt
  • 2 large Eggs beat
  • ¼ cup Pecan meal
  • 2 cups Bread flour

Fruits and Nuts

  • 1 cup Chopped walnuts
  • ¼ cup Golden raisins
  • ¼ cup Dry apricots (chopped) 
  • ¼ cup Dried cherries
  • ¼ cup Chopped dried apples
  • ¼ cup Dark raisins
  • ¼ cup Cranberries

Directions

Step 1

Dissolve the yeast in ¼ cup of warm water and set aside. Then in a medium bowl, combine the all-purpose flour, vital wheat gluten, salt, granulated sugar, cinnamon, and butter. Mix until combined.

Step 2

Now, add the eggs, molasses, honey, and pumpkin to the dry ingredients and mix until everything is combined.

Step 3

Gradually add the warm milk while stirring constantly. Add the yeast and mix until the dough forms a soft ball.

Step 4

Turn out the dough onto a lightly floured surface and knead for 8-10 minutes or until it becomes elastic. Place the dough into a greased bowl, cover it with plastic wrap, and let it rise in a warm place for an hour or until doubled in size.

Step 5

Turn the dough onto a lightly floured surface and roll it into a rectangle of about 20” x 10. Sprinkle the pecan meal, fruits, and nuts over the dough and roll it up.

Step 6

Place the dough onto a greased baking sheet, cover it with plastic wrap, and let it rise for another hour or until doubled in size.
