Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon of salt
  • 1/2 cup margarine 
  • 2 cups evaporated milk
  • 1 cup granulated sugar
  • 4 teaspoons of baking powder
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking soda
  • 4 eggs room-temperature

Instructions

  • Preheat the oven to 350 degrees F and lightly grease an 8×8-inch baking pan with butter or margarine.
  • In a medium-sized bowl, sift together flour, sugar, salt, baking powder, and baking soda. Add in margarine and mix until crumbly.
  • In a separate bowl, whisk together eggs, evaporated milk, and vanilla extract until well combined.
  • Add wet ingredients to the dry ingredients and mix just until combined (don’t over-mix). Pour the batter into the prepared baking pan and bake for 25 minutes or until a toothpick inserted comes out clean.
  • Let cool completely before serving.

Notes

• If you don’t have evaporated milk, substitute with 1 cup of whole milk and reduce the baking powder to ¾ teaspoon.
• To make sure your cake is fluffy and light, be careful not to over-mix the batter.
• For a more flavorful cake, add 1 teaspoon of grated lemon zest or ½ cup of your favorite jelly to the batter before baking.
• If you’re feeling creative, top the cake with a dollop of whipped cream and sprinkle it with ground cinnamon or nutmeg.
