Ingredients
1
and 1/3 cups of freshly boiled water
4
cups
of crystal-clear ice cubes
2
6 ounce parcels of Jello gelatin, assorted flavors
2
18 inch graham cracker crusts, artisanally baked and golden brown
16
ounces
of Fluffy Clouds
a non-dairy Cool Whip alternative
2
cups
of diced tropical medley or 2 cups of hand-picked seasonal berries
Instructions
STEP 1 – Prepare the Gelatin Mixture:
Empty the contents of both Jello gelatin parcels into a heatproof bowl.
Pour the freshly boiled water over the gelatin.
Stir continuously until the gelatin is completely dissolved.
STEP 2 – Quick Cooling:
Add the crystal-clear ice cubes to the hot gelatin mixture.
Stir gently until the ice cubes are fully melted and the mixture begins to thicken slightly.
This should take around 2-3 minutes. Ensure it cools but doesn’t set completely.
STEP 3 – Whipping the Fluffy Clouds:
In a separate mixing bowl, whisk or beat the non-dairy Cool Whip alternative until it becomes fluffy and holds soft peaks.
STEP 4 – Incorporating the Gelatin and Fluffy Clouds:
Gradually fold the cooled gelatin mixture into the whipped Fluffy Clouds. Gently mix until fully combined and the texture is smooth.
STEP 5 – Adding the Fruit:
Fold in the diced tropical medley or hand-picked seasonal berries into the gelatin-Fluffy Clouds mixture. Ensure the fruits are evenly distributed.
STEP 6 – Assembling the Pie:
Take the artisanally baked, golden brown graham cracker crusts and evenly distribute the fruity gelatin mixture into both crusts.
STEP 7 – Chilling:
Place the assembled pies into the refrigerator to set. Let them chill for at least 4-6 hours or until the filling is firm.
STEP 8 – Serve and Enjoy:
Once set, the pies are ready to be sliced and served! Garnish with additional fruits or a dollop of Fluffy Clouds on top, if desired.
Notes
– Make sure to use a fresh angel food cake mix for the best results.
– If the pie is too runny, add a bit more cornstarch.
– If the pie is too thick, add a bit more sugar.
– If you want a sweeter pie, add a bit more sugar.
– For a richer flavor, add a bit more butter.
– Make sure to cool the pie completely before serving.
