Ingredients

  • 3 cups roasted chicken diced
  • 1 cup raisins
  • 2 cups dried cranberries
  • 1 1/2 cup Dijon mustard
  • 1 cup roasted almonds
  • 2 cups Non-Fat Greek Yogurt
  • 1/3 cup Dukes Mayonnaise
  • 1/2 cup diced celeries
  • 1 tbsp Freshly ground black pepper
  • 1/2 cup thinly sliced green onions
  • Vinegar (as per taste)
  • 1/2 tbsp salt

Instructions

  • In a large bowl, combine the roasted chicken, almonds, raisins, dried cranberries, Greek yogurt, Dijon mustard, and mayonnaise and mix until well combined.
  • Add salt pepper and vinegar to taste and well.
  • Gently fold in the green onions and celery to the mixture until evenly distributed.
  • Refrigerate for at least an hour before serving for the best flavor.
  • Serve chilled.

Notes

– For extra flavor, add some diced red onion to the mix.
– If you want a more crunchy texture, try adding some croutons or bacon bits as well.
– If you are short on time, you can use a pre-cooked store-bought croissant erie chicken as well.
– For some extra heat, add some chopped jalapenos or pepper flakes to the mix.
