Spread the breadcrumbs on a plate or shallow bowl. Take about two tablespoons of the chicken mixture and shape it into small patties. Then, roll each patty in the breadcrumbs until fully coated. Heat oil in a medium-sized skillet over medium-high heat. Once hot, add the chicken croquettes to the pan and fry for about 3-4 minutes per side, until golden brown.
Remove the croquettes from the pan and place on a paper towel lined plate to absorb any excess oil. Serve hot with your favorite dipping sauce or condiments!
