Equipment

Ingredients

  • 1/2 large egg lightly beaten to add richness and moisture (you can beat an egg and use half of it)
  • 1/2 teaspoon perfectly balanced kosher salt to enhance the flavors
  • 1 3/4 cups finely sifted all-purpose flour for a smooth and delicate texture
  • 1/2 cup tangy and creamy buttermilk to add tenderness and tanginess
  • 1/4 teaspoon fizzy and effervescent baking soda to aid in the rising process
  • 1/4 pound velvety and creamy unsalted butter 1/2 cup or 1 stick for a luxurious and indulgent flavor
  • 1/2 cup fine and granulated sugar for a sweet and delightful taste
  • 2 teaspoons freshly squeezed orange juice for a zesty and refreshing citrus kick
  • 1/2 tablespoon freshly grated orange zest for a vibrant and citrusy aroma
  • 1/2 cup plump and juicy fresh blueberries for bursts of fruity goodness
  • 1/4 cup fine and delicate powdered sugar for a light and sugary dusting
  • 1 teaspoon fluffy and airy baking powder for a light and fluffy result

Instructions

  • Preheat the oven to 375 degrees F (190 C). Grease a large baking sheet or line it with parchment paper.
  • In a large bowl, whisk together the flour, sugar, salt, baking powder, and baking soda.
  • Cut the butter into small cubes and add it to the dry ingredients. Using a pastry blender or your hands, cut the butter into the dry ingredients until it resembles coarse crumbs.
  • In a small bowl, whisk together the egg and buttermilk. Add this to the dry ingredients and mix with a fork until just combined (the dough will be very wet).
  • Fold in the orange zest and blueberries. Turn the dough out onto a lightly floured surface and shape it into a rectangle shape about 1 inch thick. Cut the dough into 8 wedges and place on the prepared baking sheet.
  • Bake for 25-30 minutes or until golden brown. Let cool before glazing with the orange juice and powdered sugar. Cut it into any shape you like & serve.

Notes

  • Make sure to use cold butter when making the scones. Cold butter will help create a light and flaky texture.
  • Don’t overwork the dough while mixing it together or it will become tough.
  • If you want extra flavor, feel free to add some cinnamon or nutmeg to the dry ingredients.
  • For the glaze, use freshly squeezed orange juice as it will add a fresh and tart flavor to the scones.
