To prepare Brussels sprouts, first remove any wilted leaves and give them a thorough rinse. Trim off the ends of each sprout, then halve lengthwise.
Heat a pan to medium-high. Pour in 2 tablespoons of extra virgin olive oil and spread it across the surface evenly. Add the cut Brussels sprouts with the cut side facing down and cook for 4 minutes without stirring.
Once the Brussels sprouts are golden and browned, flip them over with a spatula and continue cooking for an additional 4 minutes before reducing the heat to low. Sprinkle in 1.5 tablespoon of fresh thyme leaves, 1 tablespoon of kosher salt, and ¼ tablespoon of freshly ground black pepper. Stir until everything is well-combined.
Cook for 3-4 more minutes or until Brussels sprouts are fork tender. Turn off the heat and squeeze in 2 tablespoons of fresh lemon or lime juice, stirring to combine. Finally, top with 8 slices of crumbled cooked bacon before serving and enjoy!
