Carrot Button Noodles
4
small carrots around 260g
1 ⅓
cup
potato starch

Garlic Soy Noodle Sauce

stalk green onion
thinly sliced

olive oil or any other vegetable oil

tsp
granulated sugar

tbsp
light soy sauce
2
cloves
garlic
minced

tsp
sesame oil

tsp
sesame seeds garnish
Instructions
Prepare Carrots:
Peel and chop carrots into small pieces.
Put the chopped carrots in a pot with water and ½ tsp of salt. Boil them until they get soft.
Make Carrot Purée:
Blend the boiled carrots with 3 tbsp of water until it becomes a smooth mixture.
Mix with Potato Starch:
Put the carrot purée in a bowl with potato starch. Mix and knead until it becomes a smooth dough.
Shape the Noodles:
Take a small amount of dough (1/2 tsp) and wet your palms.
Squish and roll the dough in your hands to make a small ball. Use your pinky to make an indentation in the ball.
Cook the Noodles:
Put the shaped noodles in boiling water with ½ tsp of salt. Cook for 4-5 minutes until they are soft and chewy.
Optionally, you can put the cooked noodles in cold water for 10 seconds for extra chewiness.
Prepare Garlic Soy Noodle Sauce:
Transfer the noodles to a bowl and add your Garlic Soy Noodle Sauce ingredients.
Add Toppings:
Heat 2 tbsp of oil until bubbles form around a chopstick. Carefully pour the hot oil onto the noodle toppings.
Final Touch:
Mix everything well, garnish with sesame seeds, and your delicious carrot button noodles are ready to enjoy!
