  • 2 Cans of Diced Tomatoes
  • 6 tsp Extra Virgin Olive Oil
  • 2 Diced Chili Pepper
  • 2 tsp Chili Powder
  • 2 lb Boneless Chicken Breast
  • 2 Finely diced onion
  • 2 tsp Cumin
  • 6 tsp Tomato Paste
  • 4 Minced Garlic Cloves

Instructions

  • Heat olive oil in a large skillet over medium-high heat.
  • Add onion and garlic and sauté for 1-2 minutes.
  • Add chili pepper and cook for an additional 2 minutes.
  • Add diced tomatoes, tomato paste, chili powder, and cumin and stir to combine.
  • Add chicken breast and cook for 8-10 minutes or until the chicken is cooked through.
  • Serve with your favorite sides.

Notes

  • Use skin-on chicken breast for extra flavor.
  • If you like your food spicy, add an extra chili pepper or a teaspoon of cayenne pepper.
  • Feel free to serve the Chicken Tampiquena with a side salad or some tortillas.
  • If you don’t want to use chicken, substitute with pork or beef.
  • For a creamy sauce, add a can of cream of mushroom soup at the end.
