Instructions

  • Prepare the sushi rice by combining 2 cups of sushi rice and ½ cup of rice vinegar in a medium-sized pot. Cook the mixture on medium heat for about 15 minutes, stirring often.
    Once the rice is cooked, let it cool completely before using it.
  • Mix together 2 tablespoons of reduced-sodium soy sauce, ½ teaspoon of crushed red pepper flakes, ¼ cup of sugar, 1 teaspoon of minced fresh ginger root, and 1 teaspoon of salt in a bowl.
    Add the frozen breaded chicken tenders to the marinade and let them sit for at least 10 minutes.
  • Heat up a pan on medium heat with some sesame oil. Once the pan is hot, add the chicken tenders and cook for 8 minutes or until they are golden brown. Slice up the navel orange into segments for garnishing.
    Place a sheet of nori on top of your bamboo sushi mat and spread ¾ cup of cooked sushi rice over it evenly.
  • Place the cooked chicken tenders in the center of the nori sheet and top with ⅔ cup of thawed orange juice concentrate. Layer on some green onions, sliced almonds, and sweet red pepper.
  • Start rolling your sushi roll by lifting up the bottom edge of the bamboo mat and rolling it over the filling until everything is encased. Once the roll is tightly rolled, cut it into 8 slices.
    Garnish each piece with some orange segments and serve immediately

Notes

  • When rolling the sushi, keep the pressure consistent to ensure a well-formed and intact roll.
  • For a variation in texture, you can lightly toast the almonds before adding them to the roll.
