Ingredients

  • Granulated sugar- 1 cup
  • Unsalted butter softened- 1/2 cup
  • Salt- 1/2 teaspoon
  • Baking powder – 1 teaspoon
  • All-purpose flour – 2 cups
  • Milk – 1/2 cup
  • Rum or brandy – 1/4 cup
  • Eggs – 3 large
  • Raisins – 1 cup
  • Chopped walnuts – 1 cup
  • Chopped candied cherries – 1 cup
  • Chopped candied pineapple – 1 cup

Instructions

  • Preheat your oven to 350 degrees Fahrenheit and lightly grease a 9-inch round cake pan.
  • In a large bowl, blend together the butter and sugar until creamy and airy. Add in the salt, baking powder, and flour and mix until all ingredients come together.
  • Pour in the milk, rum or brandy, and eggs and blend together.
  • Gently fold in the raisins, chopped walnuts, candied cherries, and pineapple into the batter. Pour the mixture into your prepared pan and bake for 40-45 minutes until a toothpick inserted into the middle of the cake comes out clean.
  • Allow the cake to cool completely before serving.

Notes

  • For a stronger flavor, you can add more rum or brandy to the batter.
  • If your cake takes longer than 45 minutes to bake, cover it with aluminum foil and continue baking until done.
  • You can also add chopped almonds or other nuts to the cake for a different flavor.
  • The cake is best served at room temperature with a scoop of ice cream.
