Ingredients

  • 1 cup mayonnaise
  • 6 hard-boiled eggs
  • 5 pounds red-skin potatoes
  • 1 tsp sugar
  • 4 tbsp white wine vinegar
  • 1/2 cup sweet pickles
  • 1 cup sour cream
  • 6 chopped green onions
  • 1 tsp salt
  • 1 cup celery
  • 1 tsp pepper

Instructions

  • Boil the potatoes in a large pot of salted water until tender. When cooked, drain and let cool completely.
  • To prepare the other ingredients, dice the eggs, slice the pickles and celery into small cubes, and chop the green onions. Place all these ingredients in individual bowls.
  • In a large bowl, combine the mayonnaise, sugar, vinegar, sour cream, salt and pepper. Mix until all ingredients are fully incorporated.
  • Add the potatoes, pickles, celery, eggs, and green onions to the dressing. Gently fold everything together until evenly distributed.
  • Serve this Costco Potato Salad chilled as a summer side dish or alongside your favorite meals.

Notes

  • The salad can be easily doubled or tripled if you’re catering for a large gathering.
  • Other vegetables like bell peppers and carrots can also be added.
  • Feel free to adjust the amount of mayonnaise and vinegar according to your taste.
  • To shorten the cooking process, you can also use pre-cooked potatoes.
  • This potato salad tastes even better if you make it a day ahead and allow all the flavors to come together overnight.
