  • 1/2 cup olive oil
  • Salt and pepper according to taste
  • 2 pounds scallops
  • 8 cloves garlic diced
  • 1/2 cup diced fresh parsley
  • 1/2 cup diced fresh oregano
  • 2 pounds calamari rings
  • 2 pounds shrimp peeled
  • 1/2 cup diced fresh basil

Instructions

  • In a large saucepan, heat the olive oil over medium heat.
  • Add the scallops and stir to coat before cooking for 3-5 minutes, until golden browned on both sides.
  • Mix in the garlic, parsley, oregano, calamari rings, shrimp, and basil.
  • Continue cooking for 7-10 minutes until the seafood is cooked through.
  • Add salt and pepper according to your taste, then serve while hot.

Notes

  • Make sure to season with salt and pepper generously at the end of cooking. This will help bring out all the flavors of the other ingredients in this dish.
  • To keep the seafood from sticking to the pan, be sure to use a non-stick pan or add a little more olive oil.
