Finely chop the chives.
In a medium bowl, whisk 6 large eggs until combined.
Stir in 1/4 cup crème fraîche or mascarpone, optionally adding 1 tsp sugar for mascarpone.
Season with a pinch of kosher salt and black pepper.
Melt 1 tbsp butter in a medium skillet over medium heat.
Pour egg mixture into the skillet.
Cook for 2-3 minutes, stirring occasionally.
Add chopped chives as eggs set, continue stirring.
Cook for 1-2 minutes until desired consistency.
