Ingredients

  • 4 tablespoons finely chopped chives
  • 12 large eggs
  • 8 tablespoons crème fraîche or mascarpone
  • 1 teaspoon kosher salt
  • Freshly cracked black pepper to taste
  • 4 tablespoons butter

Instructions

  • Finely chop the chives.
  • In a medium bowl, whisk 6 large eggs until combined.
  • Stir in 1/4 cup crème fraîche or mascarpone, optionally adding 1 tsp sugar for mascarpone.
  • Season with a pinch of kosher salt and black pepper.
  • Melt 1 tbsp butter in a medium skillet over medium heat.
  • Pour egg mixture into the skillet.
  • Cook for 2-3 minutes, stirring occasionally.
  • Add chopped chives as eggs set, continue stirring.
  • Cook for 1-2 minutes until desired consistency.
  • Serve immediately with toast or bacon for a luxurious breakfast.

Notes

  • If you’d like a more decadent scramble, add an extra tablespoon of butter to the pan before cooking.
  • You can also substitute crème fraîche or mascarpone for Greek yogurt for a lighter option with fewer calories but still plenty of flavor.
  • For a vegan variant, use vegan butter and swap the eggs for your favorite plant-based scramble alternative.
  • Finally, feel free to customize the dish with additional ingredients like bacon, smoked salmon, or herbs of your choice.
