Ingredients

  • 1 teaspoon olive oil
  • 3 buns
  • 1 egg
  • Salt and pepper to taste
  • 5 tablespoons all-purpose flour
  • 2 tablespoons yeast
  • 4 tbsp cornflakes
  • 1 cups dandelion petals
  • 3 whole dandelion blossoms for decoration
  • 1/2 cup brown rice cooked
  • 1/4 tsp of seasonings turmeric, thyme, sage, basil, and garlic powder
  • 1/2 cup black beans cooked

Instructions

  • Preheat your oven to 350°F.
  • Heat the olive oil in a skillet over medium heat and crack an egg into it. Season with salt and pepper, then fry until cooked through – about 3-4 minutes per side.
  • In a bowl, mix together the flour, yeast, and cornflakes. Stir in the cooked egg and dandelion petals until well combined.
  • Form the mixture into 6 patties and place on a parchment-lined baking sheet. Top each patty with a dandelion blossom before baking for 20-25 minutes.
  • In another bowl, combine the cooked brown rice, black beans, and seasonings of your choice.
  • Toast the buns and top with a patty and some of the rice-bean mixture. Your Dandelion Burger is ready to serve.

Notes

  • For a vegan version, use a flax egg instead of an egg and omit the cheese.
  • If you don’t have cornflakes on hand, you can substitute them with crushed crackers or potato chips.
  • Make sure to get organic dandelion petals if possible – conventional ones may contain chemicals and other contaminants.
