Dumpster fries are the ultimate comfort food meal. They have all the flavors of a classic French fry dish but with an added kick and zest from additional ingredients. Not only are they delicious, but they're also a great way to get creative in the kitchen.

Ingredients

  • 2 boneless skinless chicken breasts
  • 150 ml chicken stock reduced-sodium
  • Pico de Gallo
  • 1 sliced green onions
  • 1 lb steak-style French fries
  • sour cream, at room temperature
  • Rooster Fajita Seasoning
  • Jalapeno Popper
  • 6 tsp Olive Oil
  • 75 gm Cream Cheese
  • 2 jalapenos
  • 1 1/2 tsp freshly ground black pepper
  • Animal Style Sauce
  • 400 ml Milk Evaporated
  • 2 bacon strips
  • 25 gm Parmesan Cheese
  • 1 1/2 tsp Groundnut Oil
  • 1 tsp Onion Powder
  • 350 gm Red Leicester
  • Pickled Jalapeno
  • 6 tsp cornflour (cornstarch)
  • 2 small Garlic Cloves

Instructions

  • In a medium saucepan, combine the cream cheese, chicken stock, bacon, jalapenos, garlic cloves, black pepper, onion powder, and Parmesan cheese. Heat over low heat and stir until all of the ingredients are well-combined. Once everything is combined, remove from heat and transfer to a bowl. Set aside.
  • In a large frying pan, heat the groundnut oil until it is hot. Add the French fries and fry for approximately 10 minutes, flipping occasionally to ensure even cooking.
  • When the fries are crisp and golden brown, remove them from the pan and transfer to a plate. Sprinkle with Rooster Fajita seasoning and mix until all of the fries are evenly coated.
  • In a separate medium saucepan, heat the evaporated milk over low-medium heat. Add the cornflour, stirring continuously for 2 minutes to create a thick paste.
  • Add the Red Leicester cheese and mix until it has melted and combined with the paste. Finally, add the reserved cream cheese mixture from earlier and stir until everything is well-combined.
  • To assemble your Dumpster Fries, place the fries on a plate or bowl. Top with the cheese sauce, pickled jalapeno, and Animal Style Sauce.

Notes

  • Try using sweet potatoes instead of French fries for a unique twist on classic dumpster fries.
  • Add some chopped jalapenos to the cheese sauce for an extra kick.
  • Top the fries with some freshly chopped cilantro and a squeeze of lime to brighten up the flavors.
  • For a healthier twist, bake the French fries in the oven instead of frying them.
  • Serve Dumpster Fries with some guacamole or sour cream on the side for even more flavor. - To make sure your fries stay crunchy, let them cool down for a few minutes after cooking before serving.
  • If you want to add an extra level of flavor, try adding some smoked paprika or chili powder to the mix. This will give it a unique and smoky flavor.
