Ingredients

  • ½ pound Ground beef

  • 1 White onion
  • 1 Red onion
  • 1 Jalapeno
  • Avocado oil

  • 1 tbsp Worcestershire sauce
  • 1 tsp taco Tuesday flavor god

  • 1 tsp chipotle flavor god
  • ½ tsp Himalayan salt and pink peppercorn flavor god

  • ¼ Ground cumin for the smell

  • ½ tsp Crushed red pepper
  • Lemon

Ingredients for taco batter

  • 2 eggs
  • ½ tsp taco Tuesday seasoning
  • ½ tsp chipotle flavor god

  • Mexican four-cheese shredded mix
  • Olive oil

Ingredients For garnish

  • Chunky guacamole with avocado
  • Chopped Lettuce
  • Chopped tomatoes
  • Sour cream

Instructions

  • Preheat the oven to 375 degrees Fahrenheit.
  • In a medium pot, heat up avocado oil on medium-high heat and add the ground beef. Stir frequently while cooking for about 5 minutes or until fully cooked through.
  • Add the white onion, red onion, jalapeno, Worcestershire sauce, taco Tuesday flavor god, chipotle flavor god, Himalayan salt and pink peppercorn flavor god, ground cumin and crushed red pepper.
  • Cook for an additional 2-3 minutes or until the vegetables are softened. add the juice of one lemon.
  • Meanwhile in a small bowl whisk together the eggs and taco Tuesday seasoning.
  • Grease a mini waffle maker with olive oil, and add ¼ cup of the egg mixture to each side. Cook for 3-5 minutes or until golden brown.
  • Once the tacos are cooked, place them in an oven-safe dish and top with Mexican four cheese shredded mix. Bake for 10 minutes or until the cheese is melted and bubbling.
  • In a pull chopper, combine chunky guacamole with avocado, lettuce, tomatoes and sour cream. Then, garnish the tacos.
  • Serve the tacos in taco stands topped with the toppings and enjoy!

Notes

  • Use freshly ground beef for the best flavor
  • Adjust the spice level to your taste
  • For a Mexican twist, add queso blanco
  • Use avocado oil for better taste and healthier option
