Preheat the oven to 375 degrees Fahrenheit.
In a medium pot, heat up avocado oil on medium-high heat and add the ground beef. Stir frequently while cooking for about 5 minutes or until fully cooked through.
Add the white onion, red onion, jalapeno, Worcestershire sauce, taco Tuesday flavor god, chipotle flavor god, Himalayan salt and pink peppercorn flavor god, ground cumin and crushed red pepper.
Cook for an additional 2-3 minutes or until the vegetables are softened. add the juice of one lemon.
Meanwhile in a small bowl whisk together the eggs and taco Tuesday seasoning.
Grease a mini waffle maker with olive oil, and add ¼ cup of the egg mixture to each side. Cook for 3-5 minutes or until golden brown.
Once the tacos are cooked, place them in an oven-safe dish and top with Mexican four cheese shredded mix. Bake for 10 minutes or until the cheese is melted and bubbling.
In a pull chopper, combine chunky guacamole with avocado, lettuce, tomatoes and sour cream. Then, garnish the tacos.
Serve the tacos in taco stands topped with the toppings and enjoy!
