Ingredients

  • 2 cups neutral oil for frying such as vegetable or canola oil, providing a high smoke point and allowing the chicken to fry to perfection, resulting in a crispy and golden exterior.
  • 1/2 egg white beaten acting as a binding agent to help adhere the flour and seasonings to the chicken, ensuring a crispy and well-coated texture.

Instructions

  • In a large bowl, combine the all-purpose flour, brown sugar, oregano, chilli powder, ground allspice, black pepper, celery salt, sage, onion salt, paprika, dried basil, marjoram and garlic powder.
  • Cut the chicken into 10 pieces. Rub each piece with the prepared seasoning mixture.
  • Place the chicken in a large resealable bag and cover it with the egg white. Refrigerate for at least 30 minutes or overnight.
  • Preheat the oven to 375 F.
  • Heat oil to 375 F in a deep-fryer or Dutch oven. Working in batches, carefully place the chicken pieces into the hot oil and fry until golden brown and cooked through (about 15-20 minutes). 
    Drain on paper towels before transferring to a baking sheet lined with parchment paper.
  • Bake for an additional 10 minutes or until fully cooked through. Serve immediately with your favourite dipping sauces.

Notes

• Be sure to use an instant-read thermometer to check the temperature of the chicken wings before serving.
• Make sure you have plenty of oil in your deep-fryer or Dutch oven – the chicken needs to be completely submerged to fry correctly.
• If you don’t have a deep fryer, you can also bake these wings in the oven at 400F degrees for 30 minutes.
