Ingredients

  • 1/2 pound boneless, skinless chicken breast (chopped)
  • 1/4 cup red grapes diced
  • 1 stalk medium-diced celery
  • 1/4 cup of plain no fat Greek yogurt
  • 1/4 tbsp freshly squeezed lemon juice
  • 1/8 cup roughly chopped pecans
  • 1/8 cup raisins or dried cranberries
  • 2 tbsp minced white onion 
  • 1 tbsp brown sugar or white granulated sugar
  • 1/2 tbsp salt

Instructions

  • In a large bowl, combine celery, grapes, onion, cranberries, and chicken breast.
  • In a small bowl, whisk together sugar, lemon juice, and salt. Pour over the chicken salad mixture and mix until everything is evenly coated.
  • Gently fold in the Greek yogurt until it’s fully incorporated into the salad.
  • Sprinkle in the roughly chopped pecans, stirring to combine all of the ingredients. Taste and adjust seasonings if desired.
  • Serve chilled with your favorite bread or crackers, or enjoy it as a standalone dish! If desired, garnish with extra cranberries and/or pecans.

Notes

  • For an added boost of flavor, try adding a pinch of garlic powder or onion powder to the salad.
  • If you want to add a bit of crunch, try adding some sliced or walnuts into the.
  • To make this dish vegan, substitute the chickpeas or another of your favorite plant-based protein.
  • If you prefer a creamier texture, try adding some mayonnaise or avocado to the salad.
  • If you’re looking for an extra kick of flavor, add a dash of paprika or cayenne pepper to the mix.
