Ingredients

For the Nut Mixture:

  • 2 handfuls of mixed nuts like peanuts almonds, or cashews
  • 2 generous tablespoons of butter
  • 1/2 cup of brown granulated sugar
  • 1/2 teaspoon of pure vanilla extract

For the Maple Candy:

  • 2 generous cups of pure maple syrup
  • 1/2 cup of water
  • 1 cup of fine granulated sugar
  • 1/2 teaspoon of kosherl salt

Instructions

  • Gather all necessary ingredients and equipment.
  • Line a baking sheet with parchment or wax paper.
  • In a large saucepan, combine sugar, water, butter, and salt over medium heat. Stir until sugar dissolves. Bring to a boil and cook for 2-3 minutes until it reaches 235°F (118°C) or forms a soft ball in cold water.
  • Remove from heat, stir in vanilla and maple syrup. Add mixed nuts and coat evenly.
  • Pour mixture onto a prepared baking sheet and spread evenly. Cool for about 30 minutes until it hardens.
  • Break candy into bite-sized pieces and serve your homemade maple nut goodies.

Notes

  • Chopped nuts: For a textural variation, you can coarsely chop the nuts instead of using whole ones. This will create more surface area for the syrup to cling onto, resulting in a craggier, crunchier candy.
  • Cooling time: It is essential to let the candy cool completely before breaking it into pieces. If removed too early, the candy may not hold its shape and will be sticky to the touch.
  • Experiment with flavors: While peanuts are traditionally used in this recipe, you can try using different types of nuts or mixing multiple varieties to create your unique blend. You can also add a sprinkle of cinnamon or sea salt on top for an extra flavor boost.
