Equipment

Ingredients

  • 3 1/2 cups wheat flour
  • 1 cup luke warm milk
  • 4 tsp active dry yeast
  • 1/2 cup warm water
  • 1/2 cup minced white onion
  • 4 tsp kosher salt
  • 3 tbsp Melted Butter
  • A pinch of salt and 2 tablespoons water with 1 egg for egg wash
  • 1/4 cup granulated sugar
  • 1/2 cup Dole Pineapple Juice

Instructions

  • In a large bowl, add the warm milk and yeast. Mix well until the yeast is dissolved. Add in the warm water, butter, flour, sugar, salt, pineapple juice and mix until combined.
Once it forms into a dough ball, turn it out onto a floured surface and knead for about 8 minutes or until it is smooth and elastic.
  • Place the dough in a greased bowl and cover with a damp cloth or plastic wrap. Let it rise for about an hour in a warm place, until it has doubled in size.
Once the dough has risen, knead it again for about 2 minutes.
  • Preheat your oven to 350°F (175°C). In a small bowl, mix together the sliced onion with the pineapple juice and set aside.
On a floured surface, roll out the dough into an oval shape about 10 inches long and 8 inches wide. Spread the onions and pineapple juice mixture over the top of the dough and let it sit for about 5 minutes to absorb the liquid.
If desired, you can brush the surface of the dough with an egg wash before baking. Bake in a preheated oven for 25-30 minutes or until golden brown. Remove from the oven and let cool on a wire rack before serving.

Notes

  • Make sure to knead the dough for 10 minutes until it is smooth and elastic. If not done properly, your bread will be dense and heavy.
  • If you're looking for sweeter onion bread, add an extra tablespoon of sugar.
  • For a more intense onion flavor, add a tablespoon of onion powder to the dough.
  • For a crunchier top crust, brush with butter or egg wash after baking.
  • Make sure your oven is preheated and keep an eye on it while baking so that you don't over bake the bread.
