Equipment

  •  Big bowl
  • Rubber spatula
  • Whisker

Ingredients

  • 5 sticks of butter
  • 5 cups confectioners’ sugar
  • 1 tbsp pure vanilla extract
  • 5 cups of all-purpose flour
  • 12 ounces Philadelphia Cream Cheese
  • 1 teaspoon salt
  • 10 eggs

Instructions

  • Preheat the oven to 350°F (177°C). Grease a 9×5 inch loaf pan and line it with parchment paper.
  • In a medium bowl, cream together the butter and sugar until light and fluffy. Beat in the vanilla extract.
  • In a separate bowl, sift together the flour and salt.
  • Gradually add the dry ingredients to the creamed mixture, mixing until just combined.
  • In a small bowl, beat the cream cheese until smooth. Gradually add this to the batter and mix until well combined.
  • Add the eggs one at a time, beating well after each addition.
  • Pour the batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  • Let cool in the pan for 30 minutes before transferring to a wire rack to cool completely.

Notes

  • For a more intense flavor, use one teaspoon of lemon or orange zest in the batter.
  • Top with a simple cream cheese glaze for an extra touch of sweetness. Just combine together 4 ounces (113 grams) of softened cream cheese, ½ cup (60 grams) of powdered sugar, and 1-2 tablespoons (15-30 ml) of milk. Drizzle over the cooled cake.
  • Add a few tablespoons of chopped nuts or dried fruit to the batter for added texture and flavor.
  • For a richer version, replace half of the butter with vegetable shortening.
