Equipment

  • Whisk
  • Measuring cups and spoons
  • Electric Mixer or Hand Whisk
  • Baking sheets
  • Spoon or cookie scoop
  • Wire rack

Ingredients

  • 1 large egg
  • 1/2 teaspoon baking soda
  • 6 tablespoons granulated sugar
  • 1/2 cup butter softened
  • 1/4 teaspoon sea salt
  • 1 1/2 cups Old-Fashioned Quaker oats
  • 6 tablespoons of brown sugar
  • 1/2 package of NESTLÉ® TOLL HOUSE® Butterscotch Flavored Morsels
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon Ceylon cinnamon
  • 5/8 cups flour

Instructions

Step 1:

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. This will ensure that your cookies don’t stick to the pan and come out perfectly every time.

Step 2:

  • In a medium-sized mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Using an electric mixer, beat the mixture until it is light and fluffy. This step is crucial as it helps incorporate air into the batter, resulting in a lighter texture for your cookies.

Step 3:

  • Add the egg and vanilla extract to the mixture and continue to beat until well combined. The egg acts as a binding agent, while the vanilla extract adds a hint of aromatic sweetness to the cookies.

Step 4:

  • In a separate bowl, whisk together the flour, baking soda, and sea salt. This step ensures that the dry ingredients are evenly distributed and prevents any lumps from forming.

Step 5:

  • Gradually add the dry ingredients to the butter and sugar mixture, mixing well after each addition. This will ensure that your cookie dough has a consistent texture and flavor throughout.

Step 6:

  • Stir in the oats, butterscotch morsels, and cinnamon. The oats add a chewy texture to the cookies, while the butterscotch morsels provide a creamy and indulgent flavor. The touch of cinnamon adds a hint of warmth and depth to the overall taste.

Step 7:

  • Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. The cookies will spread as they bake, so it’s essential to leave enough room between them to ensure even cooking.

Step 8:

  • Bake for 9-11 minutes or until the edges are golden brown. Keep a close eye on the cookies as they bake, as over-baking can result in a dry and crumbly texture.

Notes

  • – Egg: Make sure your egg is room temperature. This will help it incorporate better into the batter and ensure a more uniform texture.
  • – Butter: I recommend using unsalted butter to have better control over the saltiness of the cookies. If you only have salted butter on hand, reduce the added salt accordingly.
  • – Oats: Old-fashioned Quaker oats work best for this recipe as they provide a chewy texture. Avoid using instant oats, as they can become too soft and lose their texture in the baking process.
  • – Butterscotch Morsels: NESTLÉ® TOLL HOUSE® Butterscotch Flavored Morsels add a unique and rich flavor to these cookies. However, feel free to experiment with other flavors like chocolate chips or dried fruits if you prefer.
  • – Ceylon Cinnamon: While any type of cinnamon will work, Ceylon cinnamon has a sweeter and milder flavor profile that pairs beautifully with the butterscotch and oats.
  • – Baking Time: Keep in mind that baking times may vary depending on your oven, so it’s crucial to keep a close eye on your cookies. Remember, a slightly under-baked cookie is better than an over-baked one!
