Ingredients

  • 2 cups yellow cornmeal
  • 1 ½ cup hot water

  • 2 cups canola oil
  • 1 teaspoon salt
  • 1 tablespoon sugar

Instructions

  • In a large bowl, combine the cornmeal and hot water until it forms a thick paste.
  • Heat the canola oil in a frying pan over medium heat.
  • Using a large spoon, scoop up the cornmeal and shape it into patties. If you prefer, you can also use your hands but make sure they are moistened with water first to avoid burning them due to the heat of the cornmeal. Another way to shape the batter into patties is by dampening your hands with water and flattening the batter into large teaspoonfuls. This will help ensure that the patties are evenly formed.
  • Once the oil is hot, add the patties one by one. Fry each side of the patties for about 2 minutes each until golden brown.
  • Remove from the heat and place on a paper towel to soak up excess oil.
  • Sprinkle it with salt and sugar before serving.

Notes

  • Make sure to use hot water in order to avoid lumps in the cornmeal mixture.
  • Use a spatula to flip the patties, as they are fragile and may break easily.
  • The oil should be hot but not smoking in order to create the perfect golden color on your patties.
