Equipment

Ingredients

  • 4 cups sugar or more to taste
  • 4 tbsp gelatin powder
  • 1 1/2 cup water
  • 1 cup cold water
  • Lemon or vanilla extract

Instructions

  • Combine the cold water and gelatin in a small bowl and stir until dissolved.
  • Heat up a saucepan over medium heat, adding water and sugar then stirring constantly for around 5 minutes. Check with a candy thermometer to make sure that it has reached 230 degrees (the softball stage).
  • Pour the gelatin mixture into the hot sugar syrup, mixing it together thoroughly. Take it off the heat and divide it into separate cups, adding food color for a glossy effect.
  • Put the mixture in different-shaped molds to rest. When ready, take out the molds and give them a sugary coating before serving.

Notes

  • Use a candy thermometer when boiling the sugar syrup to ensure accurate temperature readings.
  • Make sure to let the mixture cool completely before cutting. If it is still too hot, you will end up with a sticky mess!
  • Adding a few drops of lemon juice or white vinegar to the sugar syrup will help keep it from crystallizing.
  • Use different colored food coloring and extracts to create unique flavor combinations!
  • If you don't have a 9x13-inch pan, use whatever size you have available. The candy will just be thicker or thinner depending on the size of the pan.
