In a slow cooker, combine the pinto beans, onion, garlic, jalapeño pepper, cumin, chili powder, salt, and pepper. Pour in the broth and stir to combine.
Add the bacon and ham and stir again. Cover and cook on low for 8-10 hours or high for 4-5 hours, until the beans are tender.
Once done, add in the diced tomatoes and cilantro and stir to combine. Taste for seasoning and adjust if needed. Serve warm with your favorite accompaniments.

- Adding the diced tomatoes and cilantro at the end will help keep them from getting too soft.- This dish can easily be customized to your tastes! Feel free to add extra spices, more or less jalapeño pepper, etc.- If you prefer a thicker sauce, mix together 1 tablespoon of cornstarch with 2 tablespoons of cold water and add it to the slow cooker during the last hour of cooking.- For a vegan/vegetarian dish, simply omit the bacon and ham and replace the chicken or beef broth with vegetable broth. Also, try adding some cooked lentils for an extra boost of protein!
