  • 1 lb dried pinto beans, rinsed and picked over
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeño pepper, seeded and diced

  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 6 cups chicken or beef broth
  • 1 lb bacon, diced
  • 1 lb ham, diced
  • 1 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro

Instructions

  • In a slow cooker, combine the pinto beans, onion, garlic, jalapeño pepper, cumin, chili powder, salt, and pepper. Pour in the broth and stir to combine.
  • Add the bacon and ham and stir again. Cover and cook on low for 8-10 hours or high for 4-5 hours, until the beans are tender.
  • Once done, add in the diced tomatoes and cilantro and stir to combine. Taste for seasoning and adjust if needed. Serve warm with your favorite accompaniments.

Notes

- Adding the diced tomatoes and cilantro at the end will help keep them from getting too soft.
- This dish can easily be customized to your tastes! Feel free to add extra spices, more or less jalapeño pepper, etc.
- If you prefer a thicker sauce, mix together 1 tablespoon of cornstarch with 2 tablespoons of cold water and add it to the slow cooker during the last hour of cooking.
- For a vegan/vegetarian dish, simply omit the bacon and ham and replace the chicken or beef broth with vegetable broth. Also, try adding some cooked lentils for an extra boost of protein!
