Instructions
Begin by washing and drying your jalapenos, then slice them in half lengthwise and remove the seeds from each pepper.
Next, mince the garlic cloves and combine with lime juice and salt in a small bowl to make a paste.
Heat the cooking oil in a large skillet over medium-high heat until it is hot but not smoking. Add the jalapenos to the hot oil and fry for 2-3 minutes or until they are lightly browned on both sides. Remove from heat and set aside on a plate lined with paper towels to drain off any excess oil.
Once cooled, place all jalapenos into a food processor along with garlic paste, and blend until completely smooth.
Transfer the salsa to a bowl or airtight container to store.
Notes
– To reduce the heat level of the jalapeno peppers, remove as many seeds as you can before adding them into your processor.– For extra flavor add in a tablespoon of fresh cilantro leaves when blending.– If you don’t have a food processor, you can use an immersion blender instead for this recipe.– When storing in the refrigerator be sure to keep it covered tightly so it doesn’t pick up flavors from other items in your fridge.
