Ingredients

Potato Button Noodles:

  • 4 yellow potatoes
  • 2-8 tbsp water
  • 2 2/3 cups potato starch

Chili Oil Sauce:

  • 4 cloves garlic
  • 4 tsp light soy sauce
  • 1 tsp granulated sugar
  • 2 stalks green onion
  • 2 tbsp Chinese black vinegar
  • 2 tbsp Korean chili powder gochugaru
  • 6 tbsp vegetable oil or canola oil
  • 2 tsp dark soy sauce

Garnish:

  • 2 tsp sesame seeds

Instructions

Prepare Potato Button Noodles:

  • Peel and chop the yellow potatoes into small cubes.
  • Place the potato cubes in a blender or food processor. Add water gradually (2-8 tbsp) as needed to help blend into a smooth, thick paste.
  • Transfer the potato paste to a large mixing bowl and gradually add potato starch, stirring continuously to form a dough-like consistency. The amount of water and potato starch may vary, so adjust as needed.
  • Take small portions of the potato dough and shape them into button-like noodles. Set aside.

Cook Potato Button Noodles:

  • Bring a pot of water to boil.
  • Carefully drop the potato button noodles into the boiling water. Cook for 2-3 minutes or until they float to the surface.
  • Drain the noodles and set aside.

Prepare Chili Oil Sauce:

  • Mince the garlic cloves and finely chop the green onions.
  • In a small bowl, mix light soy sauce, granulated sugar, Chinese black vinegar, Korean chili powder, and dark soy sauce. Set aside.
  • Heat vegetable oil in a pan over medium heat. Add minced garlic and chopped green onions. Sauté until fragrant.
  • Pour the prepared sauce mixture over the garlic and green onions. Stir well and let it simmer for a minute.

Combine Noodles and Sauce:

  • Toss the cooked potato button noodles into the chili oil sauce. Ensure the noodles are evenly coated.

Garnish:

  • Sprinkle sesame seeds over the noodles as a garnish.

Serve:

  • Transfer the Potato Button Noodles to serving plates or bowls.
