Ingredients

  • 22 pieces of Fiber crackers
  • freshly ground black pepper to taste
  • 6 tsp fresh lemon juice
  • 2 lb smoked salmon
  • 2 handful of fresh dill
  • 2 tubs of cream cheese

Instructions

  • Preheat your oven to 350°F.
  • Top crackers with slices of smoked salmon and sprinkle some black pepper over the top. Squeeze lemon juice, then finish with fresh dill.
  • Bake for 10-15 minutes or until salmon is cooked through and the crackers are golden and crisp.
  • Spread a generous layer of vegan sour cream over each cracker.

Notes

  • For a heartier dish, add some sliced tomatoes or diced onions to the top of the crackers before baking.
  • If you want more flavor, sprinkle some smoked paprika over the salmon before baking.
  • If you’re short on time, you can skip the baking step and just top the crackers with smoked salmon, vegan sour cream, lemon juice, and fresh dill.
  • If you want to make this dish spicier, add a sprinkle of cayenne pepper or crushed red pepper flakes to the salmon before baking. The heat will add another level of complexity to the flavor profile and truly elevate the dish. Remember to adjust the quantity according to your preference.
