Preparation: Start by setting up a breading station. In three separate shallow bowls or dishes, place the flour in one, beaten eggs in another, and the Panko breadcrumbs in the third.
Prepare the Spam: Open the cans of SPAM and drain any excess liquid. Cut the SPAM into fry-shaped strips, approximately 1/2 inch wide and 3 inches long.
Coat the Spam: Take each strip of SPAM and coat it thoroughly in the flour, shaking off any excess. Then dip it into the beaten eggs, ensuring it’s fully coated. Finally, roll it in the Panko breadcrumbs, pressing gently to make sure the breadcrumbs stick to the SPAM.
Heat the Oil: In a deep skillet or frying pan, heat the extra virgin olive oil over medium-high heat until it reaches about 350°F (175°C). Use enough oil to submerge the Spam fries.
Frying the Spam: Carefully place the coated Spam strips into the hot oil, working in batches to avoid overcrowding the pan. Fry the Spam fries for about 2-3 minutes or until they turn golden brown and crispy, flipping them halfway through to ensure even cooking.
Drain and Serve: Once the Spam fries are golden and crispy, use a slotted spoon or tongs to remove them from the oil and transfer them to a plate lined with paper towels. This will help absorb any excess oil.
Enjoy: Serve the Spam fries hot and crispy! They can be enjoyed on their own or paired with your favorite dipping sauce, such as ketchup, Sriracha mayo, or a sweet chili sauce.
